Are you looking for something special, then give the hanging tender steak (aka the "hanger") a try. The hanging tender steak is one of our favorites, as it's one of the richest and most flavorful steaks you can get.
This cut of steak wasn't well known in the United States until it started to show up on restaurant menus more recently. We try to always keep a few in stock, but there is only one of these per beef animal, so they're a rarity. If you're looking for something special, with great flavor, and a very reasonable price this is a great option!
Similar to a skirt steak the hanging tender steak is great for grilling and marinating for fajitas, stir fries, or putting on a salad.
The hanging tender is a dense piece of meat, and it's best to cook over medium heat to a medium-rare. Too rare and this cut can be chewy, and too well done and it can be tough. We recommend nothing more than medium (if you prefer more well done) and cutting into thin slices on the diagonal across the grain of the steak.

Our hanging tender steak comes from cattle raised on pasture year-round on our Wisconsin family farm, with no added hormones and antibiotics. It’s 100% grass-fed and all cuts are dry-aged for at least 3 weeks.
