The skirt can be tough if overcooked and not cut properly. We recommend nothing more than medium and cutting into thin slices on the diagonal across the grain of the steak.

Our skirt steak comes from cattle raised on pasture year-round on our Wisconsin family farm, with no added hormones and antibiotics. It’s 100% grass-fed and all cuts are dry-aged for at least 3 weeks.
