The flank steak is lean, yet flavorful, but also one that you have to be careful with when cooking, or it's very easy to end up with a tough piece of meat. It's great braised, grilled, stir-fried, smoked, or sous vide. If grilling a quick sear on each side and cooking rare to medium, it will be at its best.
